With this beautiful sunshine comes the heat, and the last thing I want to do is spend a lot of time in the kitchen. I’m trying to focus more on being outside with the boys and enjoying the summer. Last week I said “yes” to his request for a picnic outside for dinner and it was just awesome. Dad was out of town, it was hot, and I had no energy left to make a big meal.
I honestly don’t remember what it even exactly was, just that I let H decide, and it ended up being a random smorgasbord of pantry and fridge contents, including a giant bowl of grapes. But I do remember eating (salami maybe?) out on our back deck, and the huge smile on H’s face. He just kept telling me how cool it was and “hey mom, dad really missed out, huh?”.
Yes, dinner definitely took a little longer than normal. But that’s why I started it early, too. There were crumbs all over the place by the time we were done, but all I needed to do was sweep them away. It was just a really really fun night, and both the boys were so exhausted after dinner that they practically were practically snoring by the time their heads hit the pillows.

For this dinner with my dudes, H has requested burgers and cheese. Thanks to the recent tzatziki-kick my husband has been on, the first thing that popped into my head was doing some type of Greek/gyro style burger recipe. My husband and I randomly made feta burgers one night, right before we were married. Seven plus years down the road and we’re still enjoying them now!

You guys know my ‘diet’ is pretty strict. And because I haven’t been abiding by it the last few months, my body is hurting. So, starting this week I went back to my no gluten, etc, and I’m so ready to start feeling good again and detox my body from all the junk. I’m paying more attention to ingredients and nutrition labels again, I’m trying to stick with a cleaner diet, and I’m trying to make sure it’s something I can cook up quickly.
These Greek-inspired burgers with tzatziki sauce are gluten-free, and a really delicious way to enjoy a summer evening.
Greek Inspired Feta Burgers Recipe:
- 1lb Open Nature®'s Grass Fed 85% Lean Ground Beef 15% Fat
- 1 Open Nature's Cage Free Brown Large Grade A Egg
- 1/2+ cup feta cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp pepper
- Pepperoncini peppers
- Additional Feta for topping
- Combine all ingredients in a large bowl. Heat large frying pan to medium heat. Form burger patties and set aside. Spray pan with oil to prevent from sticking. Cook for 4 minutes, covered, on one side. Flip patties and turn down heat a little. Cover pan again and cook another 5-7 minutes, or until burgers are cooked through. Remove from pan, and let cool a little.
- Serve with more feta, pepperoncini peppers, and tzatziki sauce and a Greek salad on the side. Other Greek burger toppings include spinach, avocado and tomato!
Easy Tzatziki Sauce Recipe:
- 1 cup Open Nature Plain nonfat Greek Yogurt Strained
- 1 tbs lemon juice
- 2 tbs dill
- Kosher salt
- Black Pepper
- Mix together yogurt, lemon juice, and dill. Add salt and pepper to taste. Chill.
- Start with a little less lemon juice, and taste as you go! If you have the extra time and ingredients, I highly recommend adding 1-2 cloves of minced garlic. And if you really want to do something special, try grating a cucumber and mixing it into the tzatziki!
My mom spoiled me when she got chickens. It was like eggs had a whole new taste. Unfortunately, no more eggs for me so I’ve been on the hunt for the best tasting grocery store eggs that aren’t a fortune. Tzatziki sauce is Amazing!! We made a Greek pizza a couple months ago and served it with tzatziki… So good. Like ranch on pizza (which is completely great) with a little Mediterranean flair.
