Vegan + Gluten Free Chickpea Salad Sandwich
This is easily my go-to lunch and / or dinner recipe. Too hot to cook? Chickpea salad sandwich. Been a long day? Chickpea salad sandwich. Want to make dinner in less than 10 minutes? Chickpea salad sandwich.
I’m serious. This is something we easily eat multiple times a week. Whether you’ve got a can of chickpeas / garbanzo beans, dried beans you’re soaking, or whatever – this vegan tuna salad copycat recipe is incredibly easy to make and put together. Plus, there are a ton of easy ways to modify this vegan and gluten free recipe!
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1/4 Cup onion, thinly chopped
- 4 Tbsp Veganaise or tahini
- 1 Tsp dijon mustard
- 1 Tbsp dill, chopped
- 1 Tsp lemon juice
- Salt and pepper to taste
- 1 Tsp garlic powder
- 4 Pieces bread
- Lettuce
- Tomatoes, sliced
Directions:
- Place 1/3 – 1 whole of the chickpeas of the rinsed chickpeas in a bowl. With the help of a fork roughly mash them. (If using less than the whole can of chickpeas, add the rest of the chickpeas and toss.)
- Add the onion, vegan mayo, mustard, dill, salt and pepper, garlic powder and lemon juice and toss to combine.
- While mixing together the vegan “tuna” chickpea salad, lightly toast the bread.
- Top one side with lettuce, chickpea salad and tomato and cover with the remaining toast.
- Repeat for remaining sandwich.
An even easier option:
- 1 can chickpeas, drained and rinsed
- 4 tbs Veganaise
- 1 tsp dijon or yellow mustard
- 1 tbs relish
- Salt and pepper to taste
Mash and mix all ingredients together, and use as a “dip” with crackers of your choice. My favorite are the sweet potato crackers from Costco! Or spread this vegan chickpea salad over bread to make a sandwich.

Sometimes it’s straight up smooshed chickpeas, vegannaise, relish and a splash of mustard. Sometimes I add Old Bay seasoning (which I highly recommend).
