Two things: 1 – y’all know I can’t stop talking about the new Albertsons on Broadway. 2 – How am I just discovering Air Frying?!
Because of my arthritis, gluten / yeast / cane sugar are off limits. Yes, that’s basically all of my favorite things. So, I have to get creative. And thanks to the incredible selection at the Broadway Albertsons, getting creative is getting easier!
Albertsons on Broadway:
First, let’s talk Albertsons. This new store is something else. I’m talking Artisanal market. Fresh produce as far as you can see. Healthy bulk food options galore. A cheese selection that would rival Parisian markets. And the bakery. Ohhh the bakery. Literally one of the first things that you’ll smell, next to the incredible floral and greenery selection, is the heavenly selection of baked goods. Loafs, muffins, cookies, cakes, pies, every type of bread imaginable.
I’m only like an eighth of the way through the store and already I’m salivating. Basically, whatever you’re looking for, you’re going to find it at Albertsons on Broadway.
This weekend I was overjoyed to see their Hatch Chile roasters out front! Yes, you heard that right. FRESH roasted Hatch Chiles! So of course, I had to take some home and whip up a delicious gluten free dish. I also swung by the cheese counter to pick up this delicious Hennings Cheddar Daisies Hatch Chile cheese. Did you know it’s made right there in store at the Albertsons on Broadway?! That’s another reason I love the store so much. A ton of what is offered in store, was made fresh, in store!
Hatch Chile Relleno
The best part of this Hatch Chile Relleno recipe? It’s gluten free and Keto friendly!
What you’ll need to make Hatch Chile Relleno:
1-2 Hatch Chiles per person
1 baked chicken breast (per 4-5ish Hatch Chiles), shredded
1 bag Mexican cheese blend
2 Eggs
Coconut flour
How to make Hatch Chile Relleno:
- Wash and dry your Hatch Chile. Slice down the middle, making sure to not cut all the way through the Hatch Chile (cut through just the top side, like you would a hot dog bun).
- In a wide, shallow dish: whisk together 2 eggs. Add coconut flour until it reaches the consistency of pancake batter. Preheat your air fryer! Go by air fryer manual, but I did 320*F and they came out perfectly.
- Sprinkle a layer of the Mexican cheese blend inside the Hatch Chile. Sprinkle shredded baked chicken on top of cheese. Add more cheese on top!
- Dredge Hatch Chile through egg and coconut flour mixture.
- Add to air fryer for time according to manual. For my air fryer, I did 10 minutes at 320*F for 2-3 Hatch Chiles. For one Hatch Chile, I did 8 minutes at 320*. They were perfectly browned, and ridiculously delicious.
