Does anyone else enjoy grocery shopping as much as I do? By myself, with the kids, whenever. I love it. And when that grocery store is the new Albertsons on Broadway, I love it even more. I know I’ve spoken about them multiple times, but it’s that amazing. It’s so light and bright and beautiful, it just makes me happy. Plus, it’s HUCKLEBERRY SEASON!!
I’ve been wanting to start baking again. But it’s been so hard now that I can’t do gluten or cane sugar! The boys were asking if we could make dinosaur muffins, so challenge accepted! These “dinosaur” muffins are perfect for grab and go breakfasts. They’re not only healthy, but delicious. And toddler approved! If you’re looking for a great gluten free, dairy free green muffin recipe – here you go!
Gluten Free + Dairy Free Green “Dino” Huckleberry Muffins:
- 2 cups gluten free flour
- 1/4 teaspoon salt
- 1 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 2 tsp baking powder
- 3/4 cup milk
- 1/2 c honey
- 1/2 c applesauce (or 1/2 c butter if diet allows)
- 1 banana
- 1 c spinach
- 1 egg
- 1 tsp vanilla extract
- 1 c huckleberries
- Preheat oven to 350, and spray or line muffin pan.
- Combine all dry ingredients in large bowl, set aside.
- Add all wet ingredients to blender, EXCEPT for huckleberries, and blend until completely processed.
- Pour blended wet ingredients and huckleberries into dry ingredients, and fold together.
- Fill muffin tins halfway, and bake for 18 minutes. Cool, and serve!
These take barely any time to make and the boys are obsessed. They think it’s SO cool that they get to eat green dinosaur / lizard food. And I love that they’re getting some sneaky fruits and veggies in an easy serving.
It’s huckleberry season!
It’s Huckleberry season, and Albertsons on Broadway is FULL of awesome huckleberry goodies! From local Idaho Huckleberry Kombucha and a plethora of fresh picked huckleberries and huckleberry products, to cooking demonstrations, and samples galore! There’s something for everyone. And I literally mean everyone.
So what’s the fuss with huckleberries? First – they’re delicious. But did you know they’re the state fruit of Idaho? Grown exclusively in the northwest and British Columbia, huckleberries are like the tart sister of blueberries. They ripen mid to late summer, so now is the perfect time to head over to the Albertsons on Broadway and take some home!
Albertsons on Broadway in Boise, Idaho
Albertsons on Broadway takes pride in featuring local farmers, producers and makers throughout the entire store. Tastes a little more exotic? They’ve got you covered. With hard to find items from all over the world!
And the deli. Oh that beautiful deli. The cheese selection is out of this world. And they have a variety of perfectly roasted and smoked meats. They have the most impressive spread of meats and seafood. There’s an incredible showcase of some of their in house dry aged beef. I literally drool every time I pass by.
Into something a little more holistic? With an in store expert to help with any questions, Albertsons on Broadway is my go-to for health products. They have a ton of options no matter what your dietary needs!
