I know I’ve spoken about them multiple times, but it’s that amazing. It’s so light and bright and beautiful, it just makes me happy. Plus, it’s HUCKLEBERRY SEASON!!
I’ve been wanting to start baking again. But it’s been so hard now that I can’t do gluten or cane sugar! The boys were asking if we could make dinosaur muffins, so challenge accepted! These “dinosaur” muffins are perfect for grab and go breakfasts. They’re not only healthy, but delicious. And toddler approved! If you’re looking for a great gluten free, dairy free green muffin recipe – here you go!
Gluten Free + Dairy Free Green “Dino” Huckleberry Muffins:
You’ll need:
Dry Ingredients:
- 2 cups gluten free flour
- 1/4 teaspoon salt
- 1 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 2 tsp baking powder
Wet Ingredients:
- 3/4 cup milk
- 1/2 c honey
- 1/2 c applesauce (or 1/2 c butter if diet allows)
- 1 banana
- 1 c spinach
- 1 egg
- 1 tsp vanilla extract
- 1 c huckleberries
Directions:
- Preheat oven to 350, and spray or line muffin pan.
- Combine all dry ingredients in large bowl, set aside.
- Add all wet ingredients to blender, EXCEPT for huckleberries, and blend until completely processed.
- Pour blended wet ingredients and huckleberries into dry ingredients, and fold together.
- Fill muffin tins halfway, and bake for 18 minutes. Cool, and serve!
That’s it!
These take barely any time to make and the boys are obsessed. They think it’s SO cool that they get to eat green dinosaur / lizard food. And I love that they’re getting some sneaky fruits and veggies in an easy serving.
It’s huckleberry season!

From local Idaho Huckleberry Kombucha and a plethora of fresh picked huckleberries and huckleberry products, to cooking demonstrations, and samples galore! There’s something for everyone. And I literally mean everyone.
So what’s the fuss with huckleberries? First – they’re delicious. But did you know they’re the state fruit of Idaho?
