For those nights when my sweet tooth is screaming at me and all I want to do is satisfy it with cookies or pie or whatever sugary goodness I can get my hands on – this is my healthy indulgence. I can give into my hankering, without feeling like I overdid it.
It’s the easiest dish to throw together, and full of good for you vitamins and nutrients so you can feel good about your midnight snack. (Andplusalso, if you’re wanting to spoil yourself a little, it’s great on ice cream, but ssh… I didn’t tell you that)
Ingredients:
- 1/2 large pear, cubed
- 3/4 c blueberries
- 1/2 c raspberries
- 1 tbs chia seeds
- 2 tbs shredded coconut
- ground cinnamon
- sliced almonds *optional*
Directions:
- Add cubed pear to a bowl with blueberries and raspberries.
- Sprinkle coconut, almond slices, chia and cinnamon on top, and mix well.
I love this ‘salad’ on its own, but it’s also delicious on pancakes and waffles, folded into coconut yogurt and with granola. A delicious desert with no added sugar, dairy, or gluten, and one you won’t feel guilty about in the morning!
