Gluten free recipe: Roasted Fall Veggie Sheet Pan with Prunes + Proscuitto Oh. My. Delicious. If you’re looking for the perfect fall dish, look no further. This roasted veggie sheet pan is the perfect way to showcase some of fall’s best. One thing I loved about making this superfood recipe was the versatility. It would be great as a side dish, but add some rice and / or quinoa, and it’s a dish all on its own. Perfect for Thanksgiving, but also easy enough for lunch or dinner any night of the week! Not only is this amazing dish gluten free, but it’s PACKED with health benefits. We all know that vegetables are good for us. We know that Brussels are low in calories but high in fiber, vitamins and minerals. We know that butternut squash is a great source of fiber, potassium, vitamins and bone health. But let’s talk about prunes for a second. Benefits of California prunes: Did you know prunes are a superfood? Yep! New studies are showing that California prunes in particular […]

This is a sponsored conversation written by me on behalf of ABSCos. The opinions and text are all mine. Zach has been traveling a ton lately, which means I’ve been solo parenting a lot. I am happy to report that I feel like it’s actually getting a little easier. Don’t get me wrong, I am no Wonder Woman. I can’t do it all. But, I’ve lowered my expectations and am learning to just go with the flow. If the boys don’t get dressed all day? It’s fine. Eating family style platters for meals because I don’t want to clean up a bunch of dishes? MAJOR WIN. A little while ago I asked for your favorite easy chicken recipes. And y’all did not disappoint! I have a huge list to make my way through, but wanted to share one of our favorites. This crockpot chicken recipe is not only gluten free, but you can make it dairy free as well! With all the healthy add-ins, this dish is not only kid friendly, but also a colorful rainbow of deliciousness! First, let me talk about something important: your protein choice. I love chicken because it’s a clean protein. You know my obsession […]
This post is sponsored by Albertsons on Broadway. Regardless, I only support the brands I love. Thank you for your support! Two things: 1 – y’all know I can’t stop talking about the new Albertsons on Broadway. 2 – How am I just discovering Air Frying?! Because of my arthritis, gluten / yeast / cane sugar are off limits. Yes, that’s basically all of my favorite things. So, I have to get creative. And thanks to the incredible selection at the Broadway Albertsons, getting creative is getting easier! Albertsons on Broadway: First, let’s talk Albertsons. This new store is something else. I’m talking Artisanal market. Fresh produce as far as you can see. Healthy bulk food options galore. A cheese selection that would rival Parisian markets. And the bakery. Ohhh the bakery. Literally one of the first things that you’ll smell, next to the incredible floral and greenery selection, is the heavenly selection of baked goods. Loafs, muffins, cookies, cakes, pies, every type of bread imaginable. I’m only like an eighth of the way through the store and already I’m salivating. Basically, whatever you’re looking for, you’re going to find it at Albertsons on Broadway. This weekend I […]
This post is sponsored by Albertsons. With this beautiful sunshine comes the heat, and the last thing I want to do is spend a lot of time in the kitchen. I’m trying to focus more on being outside with the boys and enjoying the summer. Last week I said “yes” to his request for a picnic outside for dinner and it was just awesome. Dad was out of town, it was hot, and I had no energy left to make a big meal. I honestly don’t remember what it even exactly was, just that I let H decide, and it ended up being a random smorgasbord of pantry and fridge contents, including a giant bowl of grapes. But I do remember eating (salami maybe?) out on our back deck, and the huge smile on H’s face. He just kept telling me how cool it was and “hey mom, dad really missed out, huh?”. Yes, dinner definitely took a little longer than normal. But that’s why I started it early, too. There were crumbs all over the place by the time we were done, but all I needed to do was sweep them away. It was just a really really fun night, and both the […]
Ask and you shall receive. I shared a few photos and videos this past weekend of a slow cooker chili that I was making, and had a ton of requests for my recipe. I’ll be honest, this healthy, gluten free chili recipe is usually thrown together with whatever I have in my pantry and fridge. BUT, this time I measured (for the most part). There’s something so fantastic about slow cookers. Turn it on, throw in your ingredients, and BAM. You’re done. No thinking or constantly watching the stove required. Just an easy way to feed your family! We’ve gotten another cold front that has taken us by surprise, so warm comfort foods are majorly on the menu. And I love being able to get on with my day while my house fills with the delicious smells coming from the crock pot. Gluten Free Sweet Potato, Quinoa Crock Pot Chili Recipe What is your favorite comfort food? For me, it’s chili. When my husband and I were just two young kids, working crazy schedules and trying to get by every month, this chili recipe was my way of sharing love. I make quite a big portion so that […]
This post is sponsored by HelloFresh. I’m not much of a cook. I hate meal planning. There, I said it. Look, I have a 3 year old and a 7 month old. I have been very vocal about the fact that I am not a super mom. And admittedly, my husband is the cook in our family. But, he travels for work. A lot. Which means I’m left to my own devices while he’s away. So take out, home made pizzas and mac and cheese are my usual go-tos. And that’s fine. Except for the fact that my bank account takes a major hit and the mom guilt over feeding my toddler microwave meals starts taking over. Enter HelloFresh. I’ve tried my fair share of meal delivery services, and let me tell you, HelloFresh is the bees knees. I love that HelloFresh does my meal planning, grocery shopping, and most of the food prep for me. That just leaves me to do the minimal washing, slicing, and cooking. A far more attainable endeavor for this work from home mom. My parents, as far back as I can remember, always made sure I was actively involved when it came to dinnertime. Normally, I was […]
When you think Homestyle, what comes to mind? Is there a particular recipe? Is it a pasta recipe? Desert recipe? A special chicken dish recipe that is passed down from mother to child? For my family, visions of cooking with my parents in my childhood home pop up, and I immediately flash back to that skinny little galley kitchen. Additionally, I think of weekends at my Grandmother’s, all of us cousins fighting over the same stool that was closest to our Grammy, and helping her make her famous “Bark”. Homestyle cooking makes me think of long hours spent in front of the stovetop, stirring whatever dish it was that weekend we decided to cook up that day. Memories like Thanksgiving, Christmas, and Easter – holidays where we focused almost more on the food and the company than the gifts. Thinking on these special homestyle dishes gives me such warm and happy feelings, I want to make sure that I continue that with my husband and son (and soon to be September baby!). I want to continue the traditions of putting more than just ingredients into a pot. It’s love and time and family tradition that makes something “Homestyle” to me!

The following content is intended for readers who are 21 or older. When I think Spring, I think warmer weather, sunshine, and the perfect ice cold cocktail to go along with my freshly grilled dinner. This year, however, I’ll be skipping the cocktails and grabbing a delicious “mocktail” instead, as this mama has a bun in the oven! If you’re pregnant or breastfeeding and still want to enjoy yourself at friend and family functions, I am really excited to share with you a few of the alcohol free drinks I’ve been making for our soirees with FRE Non-Alcoholic wines. I like FRE Wines because I can drink it on its own if I’m craving a glass or two of wine at the end of a gorgeous Spring day (and let’s be honest, what mother of a toddler isn’t craving a glass of wine by that time?!), but they also make great bases for some delicious non alcoholic beverages as well! The only wine […]
If you follow me on Instagram, you’ll know I’ve been more than a little off my game this past week. Apparently my head is now the resting place for the migraine from you-know-where, and it does not feel like giving me a break any time soon. Because of said migraine, I am a total hermit living under my blankets (as best as one can with a very active toddler), and I have totally been slacking on my wifey duties. Do you have a certain comfort food that makes you feel better the minute you start eating it? Butternut squash soup is quickly becoming my go-to for sick days, and after watching my mom make it for me a million times, I finally came up with a way easier to make it. Plus, when making it in the crockpot instead of on the stove, you really give the butternut squash soup time to cook down and the flavors come out in full force. If you’ve never had butternut squash soup before, I strongly encourage you to try it out! It doesn’t taste like vegetables at all, and is almost slightly sweet, yet its chalk full of good for you vitamins from […]
