Power bowls are the bee’s knees. They’re easy to prep ahead of time or for “Sunday meal prep” to use as lunches and dinners throughout the week. This vegan and gluten free protein power bowl is one of my favorites for Summer! But obviously delicious all year long. Think roasted mini peppers, crispy chickpeas, cool cucumber and creamy avocado. And an amazing sweet mustard vinaigrette that’s super simple to whisk up to finish this vegan power bowl off. Not only is the power bowl vegan, but it’s also gluten free, soy free, and nut free, while still full of flavor. In less than 30 minutes, you can cook up a delicious summery dish to enjoy hot or cold! When I was first considering going vegan, I was overwhelmed and intimidated. All the recipes I saw looked so complicated and had ingredients I had never heard of. Plus, so many vegan recipes were gluten and soy heavy. After convincing Z to give it a go in November of last year, I have been shocked at how easy it’s been! Here’s a really delicious quinoa and chickpea salad with an awesome cilantro dressing that we are currently loving. It’s quick and easy and you probably have most of these at home already! Bonus – this vegan and gluten free salad tastes amazing when you make it, but also keeps in the fridge for 3 days. Although I doubt it’ll last that long! Chickpeas have become a huge staple in our vegan diet. They are packed with nutrients and high in protein, something I was nervous about when cutting out animal proteins. And their texture and taste have proven to be delicious in every type of meal we’ve used them in. Quinoa and Chickpea Salad with Cilantro Dressing A vegan, gluten free salad that takes less than 30 minutes to make and everyone will love. Serves 4-5 Cooking time: 30 min […]
Anyone else have a guilty pleasure of eating raw cookie dough? I know, I know. It’s terrible. Raw eggs. Etc. But now that we’re vegan, we’ve had a lot of fun with different hummus recipes! This is the result of craving something sweet, but being self-quarantined and having to utilize what was in our pantry. It’s guilt-free raw chocolate chip cookie dough, that is freaking delicious. We love it on apple slices, on pancakes, spread on a banana, or even just raw right off the spoon! Plus, it’s super easy to customize. You can add shredded coconut, oats, nuts, or whatever you like. It’s foolproof! Vegan + Gluten Free Chocolate Chip Cookie Dough Hummus If you have 5 minutes, you have time to make this super easy sweet treat that the whole family will love. I use a food processor, but a blender would work just as well. Ingredients: 1 can chickpeas, drained and rinsed 1/4 c nut butter of your choice 2 tsp vanilla extract 5 tbsp maple syrup 2 tsp cinnamon 1/2 c chocolate chips (we use EnjoyLife since they’re vegan!) Directions: To your food processor or blender, add the drained and rinsed chickpeas (yes, the rinsing is […]

Toddler Snack Ideas: Healthy Nibbles for the Picky Eater in Your Life Anyone else with a toddler who one day will eat anything you put in front of them, and the next will only eat cheese sticks? Anyone? Please say yes! This last month has been a total battle of the wills when it comes to H holding out on eating until he gets what he wants. Which he does, eventually, because I can’t make myself send him to naps or bedtime without something in his stomach. Because of this, I’ve been trying to come up with creative snack ideas that are both healthy, but also something he will actually eat. The first thing I did? Find awesome snack containers! I swear, put a peanut butter sandwich on a regular plate, and my toddler will push it away, but if it’s on a dinosaur plate, or his digger plate? Oh man, step back and watch him chow down. These Snack in the Box and Drink in the Box, made with TritanTM plastic, holders both delight H because they look cool, but also make me happy because they’re so durable and easy to clean! Do you need toddler snack inspiration? I’m sharing a […]
