Recipe // (toddler approved) Green Summer Smoothie w/ Nuby

I've shared some of our favorite toddler approved green smoothies before, but I like to mix it up for H every so often so he doesn't get bored of his daily drink. He's definitely starting to get more picky about what he will and won't eat, so a smoothie is a great way to sneak in some healthy goodness to what he thinks is just a sweet and yummy snack! 

My parents took H to a vineyard and fruit orchard this past weekend, so we are swimming in peaches. I'm definitely not complaining as peaches are basically the best summer fruit out there, but my waistline is hurting after enjoying so many of the peach crumbles that we love, so it was time to mix it up and enjoy them in a little healthier of a way. 

  • 2 dates
  • 1/4c coconut water
  • 1 banana
  • 1 peach
  • 1 big leaf of kale
  • 1 - 2 tbs coconut oil
  • dash of ground cinnamon
  • 1 - 2 cups water

  1. Blend dates and coconut water until mostly smooth. 
  2. Add kale and 1 cup of water, and blend until mostly smooth. 
  3. Add banana and peach and blend. 
  4. Add coconut oil and cinnamon (and more water if you need it) and blend. 
  5. Serve in your favorite Nuby cup, and enjoy!

As you can tell by the picture above, this is currently H's favorite smoothie - he literally chases me around and tries to climb up my legs screaming "'moodie! 'moodie!" as I'm making it for him, and gets a big cheesy grin on his face as I pour it into his Wash or Toss™ Straw Cups from Nûby. His eating has improved for the most part, but we still have a long way to go, so these green smoothies help make sure he gets in all his daily vitamins and minerals, as well as some healthy fats that his very active and growing body needs.

In order to get the smoothie smooth enough, you definitely need to blend the dates with some type of liquid first, then the kale, then the rest of the ingredients. This makes sure that both the kale and dates get chopped and diced and blended well enough so that they mix in with everything else well enough. I use a NutriBullet, because its awesomesauce at emulsifying, so I have a smooth and delicious drink every time. At just under $80 currently on Amazon, it's definitely easier on the wallet than the amazingness that is the Ninja blender system, which is almost twice the price. Another thing I love about the NutriBullet is that it has such a small footprint, even those of us with tiny kitchens don't have to worry about having enough room to store it.

These Wash or Toss™ Straw Cups from Nûby are totally my new favorite cup for H, especially for smoothies. They hold about 10oz, which is great for a thirsty toddler, and are super easy for H to hold in one hand. The straw is wide enough for thicker liquids to move through without any troubles, and they are legitimately the easiest cups to clean - ever. I hand wash them a lot, just because we use them so often, but they are dishwasher safe, I always just make sure to put them on the top rack. The lids snap on and off easily, but not so easy a 19 month old toddler can do it, so they're easy to fill and refill, and the straws glide in and out smoothly. The straw runs all the way down to the base of the cup on the side, so H can make sure to get each and every drop of his smoothie. 

One of the things that I really like about this set is that for under $5 (as of 8/21/15 on Amazon) you get 4 cups, 4 lids and 4 straws - one red, one orange, one green and one blue, and they are all INTERCHANGEABLE! This means that if you're like me and have a tendency to lose sippy cup parts, it's ok! Because you've got backups! Surprisingly enough, its been around a month and I still have yet to lose any straws, tops or cups *knocks on wood*, but I still think its really fun to mix and match. I often will give H a blue cup, green straw and red lid (or some other random combination), and talk to him about the colors, so even drinking a smoothie can be a learning experience!

With an inexpensive price point, bright colors, and sturdy enough construction to be able to reuse them, I can't recommend these Wash or Toss™ Straw Cups from Nûby enough! As always, they're BPA free and they can be found on Amazon or at Meijer!

  1. YUMM! We do one that is so similar, but spinach! And if we put blueberries in it then it's a purple color which my nephews enjoy better lol (it's all in their head). Great post! Your little one is so cute!

  3. I purchase my smoothies but that's because I don't like cleaning up. Lol. I gotta try your recipe though one of these days. I haven't used peaches my smoothies - but I tell you, they're one of my favorite fruits.

  7. Peaches are a great idea for smoothies! I usually put spinach, banana, strawberry, and blueberry in my daughter's, and she keeps asking for a "Mee!". =P She's also a picky eater so being able to put vegetables in smoothies really helps.

  16. I decided to start taking this stuff and I was amazed at how "clean” the taste is, like you're drinking pure nutrition from the earth. And Green energy drinks has very little after taste like some veggie drinks I've tried.

  17. This Green Summer Smoothie is tasty. I have added a little ice too and it was really good, when I drank it in hot morning. Fresh greens juice is exciting. Best juicer for greens is in my kitchen and I really happy that I got it.
